Asian Lettuce Wraps from the Pittsfield Township Farmers Market

The Pittsfield Township Farmers Market turns FIVE this year! In coordination with National Farmers Market Week, we are hosting a Birthday Bash on Thursday, August 10th.

A favorite highlight of the Pittsfield Township Farmers Market has been chef demonstrations and tastings by Chef Kristi Zebrowski of Grace Savory and Sweet. In partnership with MIFMA, the Pittsfield Farmers Market acquired a cooking license from MDARD so that at the market, chefs can demonstrate simple and innovative ways to prepare healthy recipes. Kristi’s own experience with gluten intolerance has led to her passion for finding creative ways to create delicious recipes that meet dietary restrictions without sacrificing flavor. Twice a month, Kristi uses the week’s market goods to whip up a recipe, highlighting available ingredients from market vendors. She often chats with customers about dietary alternatives. Market-goers learn how to prepare seasonal ingredients, taste her recipes, and take home recipe cards. (Check out her recipes!)

In addition to providing tasty samples, Chef Kristi educates consumers about seasonal produce. When customers look for butternut squash in June, she helps to recommend alternatives. This connection between seasonal ingredients and tangible recipes help customers seek seasonal and healthy food options.

“Farmers and vendors put their hearts into their products, and I get to share with Market-goers creative ways to get those products onto their dinner tables [and into their hearts as well],” says Chef Kristi.

Chef Kristi will join us to celebrate our 5th Birthday Bash and cooking up lettuce wraps! The Birthday Bash will also include treats by Finchy Cakes, giveaways, a birthday-themed scavenger hunt, a kids’ craft, and music by Spencer Michaud. Congresswoman Debbie Dingell will be presenting a Congressional Records Statement in honor of the market’s fifth year.

Asian Lettuce Wraps

Fresh and healthy, the perfect summer farmers’ market recipe

Wraps

12 leaves of lettuce
2 cups rice, cooked
Microgreens (optional)

Filling

1 medium zucchini, diced
2 carrots, peeled and shredded
1 onion, diced
2 stalks of kale, rib removed and chopped
1 tbsp coconut oil
1 tsp ginger powder
1 tsp garlic powder

Sauce

2 tbsp tamari sauce or coconut aminos
1 tbsp honey
1 tsp red pepper flakes
1 tsp red wine vinegar

Directions

Heat saucepan over medium high heat, then add oil. Add onion to pan and cook until caramelized, 5-6 minutes. Add carrot and cook 2 minutes. Add zucchini, kale, ginger, garlic and toss to coat, until kale is just wilted. To make the sauce, whisk tamari sauce to rice wine vinegar in a small bowl. Assemble wraps by adding 2 tbsp rice to each lettuce leaf, top with filling, then finish with sauce. Garnish with micro greens, and enjoy!
